AMAZING SUMMER SALAD

As the weather is “hot hot hot” here in Los Angeles we are taking advantage of the summer weather and continuing to share some of our favorite summer salads. This time Lindsey made high protein lentil salad not only full of color, but also a power punch of nutrients, especially an amazing fiber hit! Lentils provide a lean source of protein, folate, dietary fiber & iron. Kale provides iron and fiber as well as vitamins A, C and K, antioxidants and magnesium. Parsley provides you with vitamin E, K and B6, as well as calcium and fiber. Finally apples provide vitamin C, B12 and fiber. What more can you ask for? Enjoy your Nutrition Journey!

 

LENTIL, KALE, BEET, APPLE SALAD WITH LEMON VINAIGRETTE 

INGREDIENTS

  • 1 cup lentils, cooked and cooled
  • 2 cups of kale, stems removed and chopped
  • 1 beet, cooked
  • ½ cup of a green apple, chopped
  • 1 lemon
  • 1 tablespoon of parsley, chopped
  • ½ tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 ½ tablespoons extra virgin olive oil
  • 1 teaspoon of agave sweetener
  • salt & pepper

METHOD

1.In a small bowl, combine beets (along with liquid if there is any) and the apple in order to turn the apple pieces pink.

2. In another bowl, combine kale and the juice of half a lemon and massage kale until the leaves have softened a bit.

3. Dressing: Combine juice of the other half of lemon, apple cider vinegar, Dijon mustard, agave, and olive oil.

4. Mix salad and dressing in a bowl and sprinkle with parsley, salt and pepper.
