CARROT SOUP SPICED UP!

SPICE UP OUR WINTER WITH THIS CARROT SOUP

We promise you will love this carrot and cilantro soup with a kick. Simple, quick and taste!!!!

This is also one of my mother’s favorite recipes which she has been making for me most of my life. Carrots are so great for us; they can assist with improved vision, prevent multiple diseases, slow down aging, promote health hair and skin, assist in the prevention of infections and great to cleanse the body. Cilantro or coriander is a right phytonutrient, providing us with vitamin A, Vitamin K, potassium & folate.

TRY THIS DELICIOUS RECIPE FOR OUR SPICED CARROT SOUP

Spicy Carrot & Cilantro Soup

INGREDIENTS

  • 1 lb of carrots
  • 1 large onion
  • 
1 bunch of cilantro
  • 1 cup of low sodium vegetable stock
  • 1 cup of water
  • freshly ground pepper, to taste
  • chili pepper, to taste

METHOD:

  1. Wash and slice carrots into 1-inch pieces.
  2. Add 1 cup vegetable stock and ½ cup of water to saucepan and cook on high.
  3. Once stock comes to a boil, place carrots in saucepan.
  4. While the carrots are boiling, wash and chop onion into medium slices. Then place chopped onions and cilantro in with the carrots.
  5. Continue to let ingredients boil for 5 minutes, or until onions are soft.
  6. Turn off heat.
  7. Let cool for 10 minutes.
  8. Use hand-held food processor to puree the ingredients in the saucepan until you reach a desired thickness (free of chunks).
  9. SERVE & ENJOY!!!
