CHICKEN WITH BASIL, MOZZARELLA & AVOCADO

I really enjoy a great nutritious summer salad recipe! A simple garden salad can be boring, and a caesar salad can have more fat and calories that other entrees, so this is a fantastic compromise. The high quality buffalo mozzarella, avocado and garlic powder combination just makes it something special!

SERVES 4

INGREDIENTS

  • 1 steamed chicken breast
  • 2 cucumbers
  • ½ cup snow peas
  • 2 small avocado
  • 2 tbsp chopped fresh basil
  • 1 cup fresh mozzarella
  • 1 tbsp cold pressed olive oil
  • 1 tsp garlic powder
  • 1 tsp pepper (or more to taste)

 

     METHOD

  1. Wash, dry, and dice the cucumbers.
  2. Wash, dry & dice Snow peas
  3. Dice the avocado and chicken.
  4. Place the cucumbers, chicken, and avocado in a bowl.
  5. Add sliced basil and mozzarella. Pour on the oil, garlic powder and pepper.
  6. Toss the salad and serve.
