So what’s the deal with these seeds?

They are derived from the desert plant, Salvia Hispanica, found in South America. Hundreds of years ago, they were recognized for providing a good source of energy among the Aztec and Mayan Tribes. Recently, they made it back to the limelight.

Nutrition gurus are hailing the small black seeds for their antioxidant effects, high amounts of fiber, protein quality, and large amounts of omega-3 fatty acids. Merely twenty-eight grams or one ounce of chia seeds contains 138 calories, 8 grams of fat (approx. 4 grams is Omega-3s), 12 grams of carbohydrate, 10 grams of fiber and 5 grams of protein. Provides us with approx. 18% of the RDA of calcium, 30% of the RDA for manganese, 30% of the RDA for Magnesium, 27% of the RDA of phosphorus as well as smaller amounts of Zinc, Vitamin B3 (Niacin), Potassium, Vitamin B1 (Thiamine) and Vitamin B2.

Along with other plant based foods, chia seeds also help reduce the risk of heart disease, obesity and diabetes. These seeds, high fiber content, also assist with gut health.The best part is you can make hundreds of recipes with these amazing seeds. Try this easy one at home:

CHIA PUDDING

Ingredients

  • ¼ cup chia seeds
  • 1 cup almond, soy, or coconut milk (depending on preference)
  • ½ tablespoon honey

Directions

  • Mix the seeds, coconut milk, and honey together in a small bowl or glass mason jar
  • Cover with cellophane and let it set in refrigerator overnight
  • Remove from the fridge and make sure that your pudding looks thick and that the chia seeds have gelled
  • Top with fresh fruit and/or nuts, and enjoy immediately!
