Yes, August is International brownie at brunch month and we couldn’t be happier about the excuse to create this healthy sweet treat recipe… Try this amazing low guilt celebration of international brownie at brunch month!!

THE HEALTHY CHOCOLATE BROWNIES
SERVINGS (16)

  • 3/4 cup brown rice flour
  • 1/2 cup cocoa powder
  • 1/4 teaspoon pink sea salt
  • 1/2 teaspoon baking powder
  • 4 tablespoons unsalted butter, at room temperature
  • 2/3 cup raw cane sugar
  • 1 large egg
  • 2 egg whites
  • 1 teaspoon vanilla extract
  • 2 tablespoons espresso
  • 1/2 cup nonfat Greek yogurt
  • 1/4 cup dark chocolate chunks
  • 1/4 cup chopped walnuts
  1. Preheat oven to 350ºF. Line square pan with baking paper & then lightly with cooking spray.
  2. In a bowl, combine flour, cocoa, salt, & baking powder. Set aside.
  3. With an electric mixer, cream butter and sugar at medium speed for 3 mins., or until combined. Add egg, egg whites, vanilla, and coffee. Continue beating until all combined.
  4. Reduce mixer speed to low & slowly add initial mixture.
  5. Add yogurt, and mix gently until combined.
  6. Finally stir in chocolate & walnuts.
  7. Spread mixture evenly in pan and bake for 20-25 mins., or until a toothpick inserted in center  comes out dry.
  8. Cool on a rack before removing & slicing.
  9. Serve & enjoy!
