Honestly I do not know how I lived before I knew the existence of Zoodles. Add them to Avocado Pesto and I can’t think of many things I like as much!!

Try this great recipe yourself.

 

ZOODLES WITH TURKEY MINCE AND AVOCADO PESTO

(4 SERVINGS)

 

Ingredients

  • 1 lb. of turkey mince
  • olive oil spray
  • 3 whole yellow or green zucchinis
  • 6 oz. package of cherry tomatoes

Avocado Pesto Ingredients

  • 1/2 medium avocado, pitted and mashed
  • 1 tbsp. lemon juice
  • 1 tsp. minced garlic
  • 1 cup packed fresh basil leaves
  • sea salt
  • 1-2 tbsp. almond milk, as needed 

Directions

  1. Wash all vegetables.
  2. Cut ends off of zucchinis.
  3. Cut the cherry tomatoes in half
  4. Using a spiralizer, spiralize zucchinis into a bowl (Follow spiralizing instructions that come with instrument).
  5. Set aside the zoodles
  6. In a food processor, blend the mashed avocado and lemon juice until smooth, stopping to scrape down as needed.
  7. Add minced garlic and basil and blend until smooth (add 1 -2 tbsp. of almond milk to help the blending)
  8. In a medium pot full of water cook the Zoodles till they are al dente
  9. Heat pan and spray with oil
  10. Pan fry turkey mince until tender
  11. Add turkey mince, pesto and Zoodles into a large bowl and toss.
  12. Serve immediately and enjoy.
