NATIONAL WATERMELON MONTH CREAMSICLES RECIPE

August is national Watermelon month and in salute to this we have come up with a great summer recipe to try to keep you cool on those hot days without adding too many extra calories.

We love this low calorie, hydrating & simply refreshing treat!! 

No matter if you are 5 or 50, in the hot months we all want to reach for something “icy” to help cool us down and too often it is ice cream…

Try this creamsicle recipe for a great alternative!!

WATERMELON CREAMSICLE 

INGREDIENTS

  • 2 cups of watermelon
  • ¼ cup of greek yogurt
  • ½ cup of coconut water
  • ¼ cup of mint

METHOD

  1. Blend the watermelon, coconut water and greek yogurt till it is a liquid.
  2. Pour into popsicle molds or ice tray filling approx. 3/4 of them and freeze for about an hour.
  3. In the mean time blend the mint and coconut water until the right consistency.
  4. After an hour take out the molds, pour mint/coconut water mixture into molds on top of the watermelon mix.
  5. Place back into the freezer until completely frozen (approx. 4 hours)
  6. To make it easier to remove from mold run under cold water
  7. ENJOY!!
