OUR FAVORITE BEET SALAD

Why do we love beet and farro in our salad?

Beetroots are a super food providing us with antioxidant, anti-inflammatory, and detoxification support. The also assist with brain function, weight loss and increased energy. Farro is an ancient grain that was believed to be a staple for the roman legions. It is a great alternative to pasta and rice. It is not wheat, but a small grain of its own, which looks similar to brown rice but has a nutty taste. It is high in fiber, magnesium and vitamins A, B, C, and E.

FARRO AND BEET SALAD

SERVES: 4

INGREDIENTS

  • 8 small beetroots, scrubbed clean, reserve leaves
  • Extra virgin olive oil
  • 8 ozs farro
  • 2 cloves garlic, thinly sliced and divided in two
  • 2 teaspoon honey
  • salt and pepper for seasoning

METHOD

  1. Preheat oven to 375F.
  2. Place the beetroots whole on a large sheet of foil, drizzle some oil over and wrap tightly in the foil.
  3. Place on a sheet pan and roast the vegetables for about 1- 1.5 hours depending on their size. When the beets are done roasting, let them cool and peel off skin, then slice them.
  4. Meanwhile cook the farro with 2 cups of water (for 8 oz farro).
  5. Put farro and water in a pot, bring to a boil and then let the farro simmer, covered for about 25 minutes or until the water is absorbed and the farro is tender.
  6. Take the beetroot leaves, wash them well and chop roughly.
  7. Heat a frying pan on high heat.
  8. Add oil and 1 clove of sliced garlic.
  9. Fry quickly and then add the beetroot leaves and stir fry quickly (about 5 minutes).
  10. Assemble the salad by placing the cooked farro in a large bowl and add slice beetroot, along with the cooked leaves. Mince or crush the remaining clove of garlic, mix it with the honey and 1/4 cup of extra virgin olive oil and salt and pepper. Pour over the salad and toss.
